- 3 cups cooked white rice, warm
- 2 fresh lemons
- 1 cup feta cheese, crumbled
- 1/2 cup sun-dried tomatoes, chopped
- 3 tablespoons olive oil
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Ensure the cooked white rice is warm before assembling.
- In a large container with a tight fitting lid, add the warm rice and shredded rotisserie chicken.
- Add the chopped sun-dried tomatoes and crumbled feta cheese.
- Drizzle the olive oil evenly over the mixture.
- Zest both lemons over the container, then squeeze in the juice from one and a half lemons.
- Add the salt, black pepper, and chopped fresh parsley.
- Seal the container tightly and shake vigorously for 20 to 30 seconds until everything is evenly combined.
- Open, taste, and adjust with the remaining lemon juice if desired. Serve immediately or refrigerate for later.
Notes
- Using warm rice helps the feta soften slightly and blend better.
- Taste before adding extra salt since feta is naturally salty.
- This bowl can be enjoyed warm, at room temperature, or chilled.
