Description

A fresh and vibrant rice bowl made with tender rotisserie chicken, fluffy white rice, bright lemon juice and zest, creamy feta, and sweet sun-dried tomatoes, all shaken together for bold, evenly distributed flavor in every bite.


Ingredients

  • 3 cups rotisserie chicken, shredded
  • 3 cups cooked white rice, warm
  • 2 fresh lemons
  • 1 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Ensure the cooked white rice is warm before assembling.
  2. In a large container with a tight fitting lid, add the warm rice and shredded rotisserie chicken.
  3. Add the chopped sun-dried tomatoes and crumbled feta cheese.
  4. Drizzle the olive oil evenly over the mixture.
  5. Zest both lemons over the container, then squeeze in the juice from one and a half lemons.
  6. Add the salt, black pepper, and chopped fresh parsley.
  7. Seal the container tightly and shake vigorously for 20 to 30 seconds until everything is evenly combined.
  8. Open, taste, and adjust with the remaining lemon juice if desired. Serve immediately or refrigerate for later.

Notes

  • Using warm rice helps the feta soften slightly and blend better.
  • Taste before adding extra salt since feta is naturally salty.
  • This bowl can be enjoyed warm, at room temperature, or chilled.
