- 2 sheets puff pastry, thawed
- 8 ounces fresh mozzarella cheese, sliced
- 2 medium ripe tomatoes, sliced
- ¼ cup fresh basil leaves
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 large egg, beaten
Instructions
- Preheat the oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small bowl, gently toss the sliced tomatoes with olive oil, salt, and black pepper.
- Lay the thawed puff pastry sheets on a lightly floured surface and cut each sheet into 4 equal squares.
- Place a slice of fresh mozzarella in the center of each square. Top with a few tomato slices and fresh basil leaves.
- Fold the corners of each square toward the center and pinch lightly to form a parcel.
- Transfer the parcels to the prepared baking sheet and brush the tops with beaten egg.
- Bake for 15 to 18 minutes until puffed and golden brown.
- Remove from the oven, allow to cool slightly, and serve warm.
Notes
- Pat the tomatoes dry before assembling to prevent excess moisture.
- Keep puff pastry cold until ready to use for best puffing results.
- Reheat leftovers in a 350 degrees Fahrenheit oven for 8 to 10 minutes to restore crispness.
- You can assemble the parcels ahead of time and refrigerate until ready to bake.
