Its combination of textures and tastes will leave you wanting more, and it’s a fantastic way to incorporate more beans into your diet.

Ingredients

Scale

Beans

  • 1 can Kidney Beans, rinsed and drained
  • 1 can Chickpeas, rinsed and drained
  • 1 cup Fresh Green Beans, trimmed and blanched

Vegetables

  • 1 Red Bell Pepper, diced
  • 1 Red Onion, diced
  • 1/4 cup Fresh Parsley, chopped

Dressing

  • 1/4 cup Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • Salt and Pepper to taste

Instructions

  1. Prepare the Beans: Begin by rinsing and draining the canned kidney beans and chickpeas. If you’re using fresh green beans, trim the ends and blanch them in boiling water for about 3 minutes until they are tender-crisp. Immediately transfer them to an ice bath to stop the cooking process.
  2. Chop the Vegetables: Dice the red bell pepper and red onion into small, bite-sized pieces. This will ensure that every spoonful of the salad is packed with flavor and crunch. Finely chop the fresh parsley as well.
  3. Combine Ingredients: In a large mixing bowl, combine the kidney beans, chickpeas, blanched green beans, diced red bell pepper, red onion, and parsley. Toss everything together gently to mix the ingredients without breaking the beans.
  4. Make the Dressing: In a small bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper until well combined. Adjust the seasoning to taste, ensuring the dressing is bright and flavorful.
  5. Dress the Salad: Pour the dressing over the bean and vegetable mixture. Toss everything together to ensure all the ingredients are evenly coated in the dressing. Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • Use Fresh Ingredients: Fresh vegetables will enhance the flavor and crunch of your salad.
  • Let it Marinate: Allowing the salad to sit for a bit before serving helps the flavors to develop.
  • Adjust Seasoning: Always taste and adjust the seasoning according to your preference before serving.
  • Serve Chilled: This salad is best served cold, making it perfect for hot summer days.
  • Make in Advance: This salad keeps well in the fridge, so feel free to prepare it a day ahead.
