Description

Tender strips of seared beef simmered in a rich and creamy mushroom sauce, finished with tangy sour cream and served over wide egg noodles. This steakhouse beef stroganoff delivers bold flavor and comforting texture in every bite.


Ingredients

  • 1 1/2 pounds beef sirloin, thinly sliced against the grain
  • 12 ounces egg noodles
  • 8 ounces mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. Season the sliced beef evenly with salt and black pepper.
  3. Heat a large skillet over medium high heat and add olive oil.
  4. Sear the beef in batches for 2 to 3 minutes until browned. Remove from the skillet and set aside.
  5. In the same skillet, add chopped onion and sliced mushrooms. Cook until softened and lightly browned.
  6. Stir in minced garlic and cook for 30 seconds until fragrant.
  7. Sprinkle flour over the vegetable mixture and stir well to combine.
  8. Gradually pour in the beef broth while stirring constantly, scraping up any browned bits from the bottom of the pan. Simmer until the sauce thickens.
  9. Stir in Dijon mustard and return the beef to the skillet. Simmer gently for a few minutes until heated through.
  10. Reduce heat to low and stir in sour cream until smooth and creamy. Do not boil.
  11. Spoon the beef mixture over the cooked egg noodles and serve warm.

Notes

  • Sear the beef in batches to ensure proper browning.
  • Add sour cream off the heat to prevent curdling.
  • If the sauce becomes too thick, stir in a splash of beef broth while reheating.
  • Slice the beef against the grain for maximum tenderness.
