  • 2 tablespoons of olive oil
  • 1 small onion, finely chopped
  • 1 tablespoon of minced garlic
  • 2 cups of chicken broth
  • 8 ounces of tomato sauce
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried cilantro
  • 1 pound of sirloin steak, sliced
  • 2 tablespoons of butter
  • Montreal steak spice, to taste
  • Pancho’s White Queso, sufficient for drizzling
  • Fresh cilantro, chopped, for garnishing
  • Flour tortillas, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add rice and stir until slightly browned, being careful not to burn it. Add onion and garlic, sautéing until fragrant and translucent.
  2. Pour in chicken broth and tomato sauce, stirring to combine. Bring to a brisk boil for 2 minutes, then reduce heat, cover, and simmer for 20 minutes until rice is tender and liquid absorbed.
  3. Meanwhile, in another skillet, melt butter over medium-high heat. Add sliced sirloin steak, seasoning with Montreal steak spice. Cook to desired doneness, stirring occasionally.
  4. After the rice has cooked, turn off heat and let it sit covered for 10 minutes to absorb flavors fully.
  5. To assemble, fluff rice with a fork, place on a serving platter, top with cooked steak, and drizzle generously with Pancho’s White Queso. Garnish with fresh cilantro and serve with warm flour tortillas.
