Description

A rich and creamy keto-friendly casserole made with tender chicken, sautéed spinach, tangy artichoke hearts, and a luscious blend of cream cheese, mozzarella, and Parmesan. Baked until golden and bubbly, this comforting low carb dinner is perfect for busy weeknights.

  • 2 pounds boneless skinless chicken breasts, cooked and cut into bite size pieces
  • 4 cups fresh spinach, roughly chopped
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 8 ounces cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese (about 170 grams)
  • 1/2 cup grated Parmesan cheese (about 50 grams)
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream (about 120 milliliters)
  • 1 tablespoon olive oil (about 15 milliliters)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. In a large mixing bowl, combine the softened cream cheese, heavy cream, minced garlic, salt, and black pepper. Mix until smooth and creamy.
  3. Heat olive oil in a large skillet over medium heat. Add the chopped spinach and sauté for about 2 minutes until wilted. Remove from heat.
  4. Add the cooked chicken, sautéed spinach, chopped artichoke hearts, shredded mozzarella, and grated Parmesan to the cream cheese mixture. Stir until everything is evenly coated.
  5. Transfer the mixture into a greased 9 by 13 inch baking dish and spread evenly.
  6. Bake for 20 to 25 minutes until hot and bubbly and the top is lightly golden.
  7. For extra browning, broil for 2 to 3 minutes at the end, watching carefully.
  8. Remove from the oven and let rest for 5 to 10 minutes before serving.

Notes

  • Drain the artichoke hearts thoroughly to prevent excess moisture.
  • Soften the cream cheese completely for a smooth sauce.
  • Use freshly shredded cheese for the best melting texture.
