Description

A savory and satisfying Spam fried rice made with fluffy white rice, crispy browned Spam, scrambled eggs, and colorful vegetables, all tossed in soy sauce and finished with a touch of sesame oil.


Ingredients

Scale
  • 3 cups cooked white rice, chilled
  • 12 ounces canned Spam, diced
  • 2 large eggs, lightly beaten
  • 1/2 cup green peas
  • 1/2 cup diced carrots
  • 3 green onions, sliced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Heat a large skillet or wok over medium high heat.
  2. Add olive oil and diced Spam. Cook for 4 to 5 minutes until browned and slightly crispy. Remove from skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  4. Push garlic to one side, pour in beaten eggs, and scramble until just set.
  5. Add green peas and diced carrots, stirring for 2 minutes until slightly tender.
  6. Add chilled cooked rice and browned Spam back into the skillet. Stir well to combine.
  7. Pour in soy sauce gradually while tossing the rice to coat evenly. Cook for 4 to 5 minutes until heated through and lightly toasted.
  8. Drizzle sesame oil over the rice, season with salt and black pepper, add sliced green onions, and toss to combine. Serve hot.

Notes

  • Use day old rice for best texture and to prevent mushiness.
  • Taste before adding extra salt since Spam and soy sauce are already salty.
  • Reheat leftovers in a skillet with a small splash of water to loosen the rice.
