Description
A savory and satisfying Spam fried rice made with fluffy white rice, crispy browned Spam, scrambled eggs, and colorful vegetables, all tossed in soy sauce and finished with a touch of sesame oil.

- 3 cups cooked white rice, chilled
- 12 ounces canned Spam, diced
- 2 large eggs, lightly beaten
- 1/2 cup green peas
- 1/2 cup diced carrots
- 3 green onions, sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet or wok over medium high heat.
- Add olive oil and diced Spam. Cook for 4 to 5 minutes until browned and slightly crispy. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
- Push garlic to one side, pour in beaten eggs, and scramble until just set.
- Add green peas and diced carrots, stirring for 2 minutes until slightly tender.
- Add chilled cooked rice and browned Spam back into the skillet. Stir well to combine.
- Pour in soy sauce gradually while tossing the rice to coat evenly. Cook for 4 to 5 minutes until heated through and lightly toasted.
- Drizzle sesame oil over the rice, season with salt and black pepper, add sliced green onions, and toss to combine. Serve hot.
Notes
- Use day old rice for best texture and to prevent mushiness.
- Taste before adding extra salt since Spam and soy sauce are already salty.
- Reheat leftovers in a skillet with a small splash of water to loosen the rice.
