Description

Slow Cooker Creamy Lemon Herb Chicken is a comforting and flavorful dish made with tender chicken breasts simmered in a creamy, zesty lemon herb sauce. Perfect for busy days, it pairs beautifully with rice, pasta, or veggies.


Ingredients

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water (if using cornstarch)
  • Fresh parsley or thyme, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a skillet, heat olive oil over medium heat and sear the chicken for 2-3 minutes on each side (optional, for flavor).
  3. Place chicken in the slow cooker.
  4. In a bowl, whisk together chicken broth, lemon juice, lemon zest, garlic, thyme, basil, and oregano. Pour over chicken.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is tender.
  6. Remove chicken and set aside. Stir in heavy cream.
  7. Optional: Mix cornstarch and water in a small bowl and stir into the sauce. Cook on high for 15–20 minutes until thickened.
  8. Return chicken to the slow cooker, spoon sauce over the top, and warm through.
  9. Garnish with fresh herbs before serving.

Notes

  • For a lighter version, use half-and-half or evaporated milk instead of heavy cream.
  • This dish goes well with mashed potatoes, rice, or roasted vegetables.
  • Add a few slices of lemon on top before cooking for extra citrus flavor.
