Description

Crispy golden zucchini fritters with a tender, savory center made from fresh grated zucchini, parmesan, garlic, and herbs. Light, flavorful, and perfect as an appetizer, snack, or easy side dish, served with cool plain yogurt.


Ingredients

  • 2 medium zucchini (about 500 grams), grated and excess moisture squeezed out
  • 2 large eggs
  • 1/2 cup all purpose flour (about 60 grams)
  • 1/2 cup grated parmesan cheese (about 50 grams)
  • 2 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup plain yogurt (for serving)


Instructions

  1. Grate the zucchini and squeeze out as much moisture as possible using clean hands or a kitchen towel.
  2. In a mixing bowl, combine grated zucchini, eggs, flour, parmesan, minced garlic, salt, black pepper, and chopped parsley. Mix until evenly incorporated.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop about 2 tablespoons of mixture per fritter into the skillet and flatten slightly with the back of a spoon.
  5. Cook for 3 to 4 minutes on each side until golden brown and crisp.
  6. Transfer fritters to paper towels briefly to remove excess oil.
  7. Serve warm with plain yogurt on the side.

Notes

  • Thoroughly squeeze zucchini to prevent soggy fritters.
  • Do not overcrowd the pan to ensure crisp edges.
  • Cook over medium heat for even browning.
  • Leftovers can be refrigerated for up to 3 days and reheated in a skillet.
