- 2 large eggs
- 1/2 cup all purpose flour (about 60 grams)
- 1/2 cup grated parmesan cheese (about 50 grams)
- 2 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh parsley, chopped
- 1/2 cup plain yogurt (for serving)
Instructions
- Grate the zucchini and squeeze out as much moisture as possible using clean hands or a kitchen towel.
- In a mixing bowl, combine grated zucchini, eggs, flour, parmesan, minced garlic, salt, black pepper, and chopped parsley. Mix until evenly incorporated.
- Heat olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of mixture per fritter into the skillet and flatten slightly with the back of a spoon.
- Cook for 3 to 4 minutes on each side until golden brown and crisp.
- Transfer fritters to paper towels briefly to remove excess oil.
- Serve warm with plain yogurt on the side.

- Thoroughly squeeze zucchini to prevent soggy fritters.
- Do not overcrowd the pan to ensure crisp edges.
- Cook over medium heat for even browning.
