- 4 medium artichokes, trimmed and halved
- 4 tablespoons butter, melted
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 200°C.
- Mix melted butter, garlic, olive oil, lemon juice, salt, and pepper.
- Line a baking tray with parchment paper.
- Brush artichokes with the garlic butter mixture.
- Place cut side down on the tray.
- Roast for 30 to 35 minutes until tender and golden.
- Brush with extra garlic butter after roasting.
- Serve warm.
