Rendang Shepherd’s Pie is a delicious fusion of the rich, spicy flavors of Indonesian rendang beef stew topped with creamy mashed potatoes, offering a comforting yet bold twist on the classic shepherd’s pie.

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon curry powder
- 1 tablespoon ground turmeric
- 1 tablespoon chili paste (or to taste)
- 1/2 cup coconut milk
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 2 large potatoes, peeled and cubed
- 1/4 cup butter
- 1/4 cup milk
- Salt and pepper, to taste
- 1/4 cup chopped cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Remove excess fat, then add the onion, garlic, and grated ginger. Cook for 2-3 minutes until softened.
- Stir in the curry powder, turmeric, and chili paste, and cook for another 2 minutes until fragrant.
- Add the coconut milk, soy sauce, and brown sugar to the beef mixture. Stir well and simmer for 10-15 minutes until the sauce thickens. Season with salt and pepper to taste.
- While the beef mixture simmers, place the cubed potatoes in a pot of water and boil until tender, about 15-20 minutes. Drain and mash with butter and milk. Season with salt and pepper to taste.
- Transfer the beef mixture into a baking dish and spread the mashed potatoes over the top, smoothing it out with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and crispy.
- Remove from the oven and garnish with chopped cilantro before serving.
Notes
- You can add peas or carrots to the beef mixture for added texture and nutrition.
- For a spicier kick, increase the amount of chili paste or add fresh chopped chilies to the beef mixture.
- Leftover shepherd’s pie can be stored in the fridge for up to 3 days and reheated in the oven.
