Description

Pollo Guisado is a traditional Latin American chicken stew made with chicken, vegetables, and a flavorful blend of spices. It’s a hearty, comforting dish often served with rice or plantains.


Ingredients

  • 1 whole chicken, cut into pieces (or 46 chicken thighs or drumsticks)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 3 garlic cloves, minced
  • 2 medium tomatoes, diced
  • 1/2 cup tomato sauce
  • 1/2 cup chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground turmeric (optional)
  • Salt and black pepper to taste
  • 1 bay leaf
  • 1/4 cup chopped cilantro (optional)
  • 1/2 cup frozen peas (optional)
  • 2 medium potatoes, peeled and diced (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and brown on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, add the chopped onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
  3. Add the diced tomatoes and cook for another 2-3 minutes until softened and fragrant.
  4. Stir in the tomato sauce, chicken broth, cumin, paprika, oregano, turmeric, salt, pepper, and bay leaf. Return the chicken to the pot, making sure it’s submerged in the liquid.
  5. Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for 35-40 minutes, until the chicken is tender.
  6. If using, add the diced potatoes and peas, and cook for another 10-15 minutes until the potatoes are tender.
  7. Garnish with chopped cilantro and serve with rice or plantains.

Notes

  • For extra flavor, marinate the chicken with garlic, onion, and spices for a few hours before cooking.
  • You can add other vegetables like carrots or bell peppers based on preference.
  • Adjust the level of spices according to your taste. For a spicier version, add chili peppers or hot sauce.
