Description
Pollo Guisado is a traditional Latin American chicken stew made with chicken, vegetables, and a flavorful blend of spices. It’s a hearty, comforting dish often served with rice or plantains.

- 1 whole chicken, cut into pieces (or 4–6 chicken thighs or drumsticks)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- 2 medium tomatoes, diced
- 1/2 cup tomato sauce
- 1/2 cup chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground turmeric (optional)
- Salt and black pepper to taste
- 1 bay leaf
- 1/4 cup chopped cilantro (optional)
- 1/2 cup frozen peas (optional)
- 2 medium potatoes, peeled and diced (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and brown on all sides (about 5-7 minutes). Remove and set aside.
- In the same pot, add the chopped onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
- Add the diced tomatoes and cook for another 2-3 minutes until softened and fragrant.
- Stir in the tomato sauce, chicken broth, cumin, paprika, oregano, turmeric, salt, pepper, and bay leaf. Return the chicken to the pot, making sure it’s submerged in the liquid.
- Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for 35-40 minutes, until the chicken is tender.
- If using, add the diced potatoes and peas, and cook for another 10-15 minutes until the potatoes are tender.
- Garnish with chopped cilantro and serve with rice or plantains.
Notes
- For extra flavor, marinate the chicken with garlic, onion, and spices for a few hours before cooking.
- You can add other vegetables like carrots or bell peppers based on preference.
- Adjust the level of spices according to your taste. For a spicier version, add chili peppers or hot sauce.
