- 1 cup fresh green peas, lightly blanched if fresh
- 1 baguette, sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 clove fresh garlic, halved
- 1 small lemon, zest and 1 tablespoon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup ricotta or crumbled feta cheese
- 1 tablespoon fresh mint leaves, finely chopped
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- Arrange baguette slices in a single layer on the baking sheet and brush lightly with olive oil.
- Toast for 8 to 10 minutes until golden and crisp.
- In a mixing bowl, lightly mash the peas with 1 tablespoon olive oil, lemon zest, lemon juice, salt, and black pepper.
- Stir in chopped mint and gently fold in the ricotta or feta cheese.
- Remove toasted bread from the oven and immediately rub each slice lightly with the cut side of the garlic clove.
- Spoon the pea mixture generously over each toasted slice.
- Drizzle with remaining olive oil if desired and serve immediately.
Notes
- Do not over mash the peas, texture adds character to the bruschetta.
- Assemble just before serving to keep the bread crisp.
- Taste and adjust lemon or salt as needed before topping the bread.
- For extra brightness, add a pinch of additional lemon zest on top.
