Description

Crisp toasted baguette slices topped with a vibrant smashed pea mixture, creamy ricotta or feta, fresh mint, and a bright touch of lemon for a light and refreshing appetizer.


Ingredients

  • 1 cup fresh green peas, lightly blanched if fresh
  • 1 baguette, sliced into 1/2 inch rounds
  • 2 tablespoons olive oil
  • 1 clove fresh garlic, halved
  • 1 small lemon, zest and 1 tablespoon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ricotta or crumbled feta cheese
  • 1 tablespoon fresh mint leaves, finely chopped


Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Arrange baguette slices in a single layer on the baking sheet and brush lightly with olive oil.
  3. Toast for 8 to 10 minutes until golden and crisp.
  4. In a mixing bowl, lightly mash the peas with 1 tablespoon olive oil, lemon zest, lemon juice, salt, and black pepper.
  5. Stir in chopped mint and gently fold in the ricotta or feta cheese.
  6. Remove toasted bread from the oven and immediately rub each slice lightly with the cut side of the garlic clove.
  7. Spoon the pea mixture generously over each toasted slice.
  8. Drizzle with remaining olive oil if desired and serve immediately.

Notes

  • Do not over mash the peas, texture adds character to the bruschetta.
  • Assemble just before serving to keep the bread crisp.
  • Taste and adjust lemon or salt as needed before topping the bread.
  • For extra brightness, add a pinch of additional lemon zest on top.
