- 2 cups rolled oats
- 2 medium ripe bananas, mashed
- 2 large eggs
- 1/2 cup milk
- 2 tablespoons honey
- 1 cup plain yogurt
- 1/2 cup blueberries, fresh
- 1/2 cup raspberries, fresh
- 1/2 cup cherries, pitted and halved
Instructions
- Preheat the oven to 350°F and lightly grease a muffin tin.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add rolled oats, eggs, milk, and honey to the bowl and stir until fully combined.
- Spoon the mixture evenly into the muffin tin wells.
- Press the mixture firmly against the sides and bottom of each well to form cup shapes.
- Bake for 20 to 25 minutes, until the oatmeal cups are golden and set.
- Allow to cool for 10 minutes before carefully removing from the tin.
- Fill each cup with plain yogurt and top with blueberries, raspberries, and cherries before serving.
Notes
- Use very ripe bananas for natural sweetness and moisture.
- Press the mixture firmly to help the cups hold their shape.
- Let the cups cool before removing to prevent breaking.
- Store without toppings and add yogurt and fruit just before serving.
