Ingredients

- 6 medium fresh tomatoes, chopped
- 2 (4 oz) cans diced green chiles, roasted
- 1 small white onion, roughly chopped
- 3 garlic cloves, minced
- ½ cup fresh cilantro, loosely packed
- Juice of 1 lime
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- ½ teaspoon ground cumin
Instructions
- Add tomatoes, green chiles, onion, garlic, cilantro, lime juice, vinegar, salt, and cumin to a blender or food processor.
- Pulse until desired texture is reached—chunky or smooth.
- (Optional) Transfer to a saucepan and simmer over low heat for 10–15 minutes for deeper flavor.
- Let cool to room temperature.
- Taste and adjust salt, lime, or chile to preference.
- Transfer to a jar or bowl and chill for at least 30 minutes before serving.
Notes
- Use fire-roasted tomatoes for added depth.
- Add a jalapeño or serrano for more heat.
- Fresh-roasted Hatch chiles bring the most authentic flavor.
