These chewy Monster Cookie Bars are loaded with oats, peanut butter, chocolate chips, and colorful M&M’s. They’re the perfect fun and satisfying treat for kids and adults alike.


Ingredients

  • 2 cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini M&M’s
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together oats, flour, and baking soda.
  3. In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.
  4. Add peanut butter, eggs, and vanilla extract to the butter mixture and beat until smooth.
  5. Gradually add the dry ingredients into the wet mixture and mix until well combined.
  6. Fold in the mini M&M’s and chocolate chips.
  7. Spread the dough evenly into the prepared baking pan.
  8. Bake for 20–25 minutes or until the edges are golden and the center is just set.
  9. Cool completely before cutting into bars.

Notes

  • Use parchment paper for easy removal and cleaner edges.
  • Cool bars fully to avoid crumbling when slicing.
  • Feel free to switch M&M’s with chopped nuts or butterscotch chips for a twist.
