Description

A hearty and refreshing Meaty Tortellini Salad made with tender cheese tortellini, savory salami, creamy mozzarella, juicy cherry tomatoes, and briny olives tossed in zesty Italian dressing.


Ingredients

  • 20 ounces cheese tortellini, cooked according to package directions
  • 6 ounces sliced salami, cut into strips
  • 8 ounces fresh mozzarella, cubed
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 3/4 cup Italian dressing
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the cheese tortellini according to package directions until tender. Drain well and let cool slightly.
  3. Transfer the cooked tortellini to a large mixing bowl.
  4. Add the sliced salami, cubed fresh mozzarella, halved cherry tomatoes, sliced black olives, and chopped parsley.
  5. Pour in the Italian dressing and olive oil.
  6. Sprinkle with salt and black pepper.
  7. Toss gently until all ingredients are evenly coated.
  8. Cover and refrigerate for at least 30 minutes before serving.
  9. Stir gently before serving and adjust seasoning if needed.

Notes

  • Do not overcook the tortellini to prevent a mushy texture.
  • If the salad seems dry after chilling, add a small splash of extra dressing.
