- 14 ounces kielbasa, sliced into rounds
- 1 ½ pounds potatoes, diced
- ½ head green cabbage, chopped (about 4 cups)
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil or butter
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Parboil diced potatoes in salted water for 5–7 minutes until just tender. Drain and set aside.
- Heat 1 tablespoon oil or butter in a large skillet over medium-high heat.
- Sear sliced kielbasa until browned on both sides, about 5 minutes. Remove and set aside.
- Add onions and garlic to the skillet and cook until softened and fragrant.
- Stir in the potatoes, season with smoked paprika, salt, and pepper, and cook until golden and crisp.
- Add chopped cabbage in batches, cooking until softened and slightly caramelized, about 8–10 minutes.
- Return kielbasa to the skillet and toss to combine.
- Sprinkle with fresh parsley and serve hot with bread or mustard on the side.
