- 4 large leeks, trimmed and split lengthwise, washed thoroughly
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons hot honey
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Place cleaned and split leeks in a baking dish cut side up.
- Drizzle with olive oil and season evenly with salt and black pepper.
- Roast for 20 minutes until tender and lightly caramelized.
- Remove from oven and sprinkle mozzarella and parmesan evenly over the leeks.
- Return to the oven and bake for 8 to 10 minutes until the cheese is melted and bubbly.
- Drizzle hot honey over the top and sprinkle with fresh thyme.
- Serve warm directly from the baking dish.
