Description

Tender roasted leeks topped with melted mozzarella and parmesan, finished with a drizzle of sweet and spicy hot honey for a bold and comforting side dish.


Ingredients

  • 4 large leeks, trimmed and split lengthwise, washed thoroughly
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons hot honey
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Place cleaned and split leeks in a baking dish cut side up.
  3. Drizzle with olive oil and season evenly with salt and black pepper.
  4. Roast for 20 minutes until tender and lightly caramelized.
  5. Remove from oven and sprinkle mozzarella and parmesan evenly over the leeks.
  6. Return to the oven and bake for 8 to 10 minutes until the cheese is melted and bubbly.
  7. Drizzle hot honey over the top and sprinkle with fresh thyme.
  8. Serve warm directly from the baking dish.
