Description

Honey Mustard Chicken Foil Packets are a simple and flavorful way to cook chicken, combining a sweet and tangy honey mustard glaze with vegetables, all cooked in a convenient foil packet for easy cleanup.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups baby potatoes, halved
  • 1 cup carrots, sliced
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic, thyme, rosemary, salt, and pepper to make the honey mustard sauce.
  3. Lay out four large pieces of aluminum foil on a baking sheet. Place one chicken breast in the center of each foil piece.
  4. Season the chicken with salt and pepper, then spoon about 2 tablespoons of the honey mustard sauce over each chicken breast.
  5. Arrange the halved potatoes and sliced carrots around the chicken on the foil. Drizzle the remaining honey mustard sauce over the vegetables.
  6. Fold the sides of the foil over the chicken and vegetables to create a sealed packet.
  7. Bake in the preheated oven for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
  8. Carefully open the foil packets, garnish with chopped parsley, and serve hot.

Notes

  • For a quicker cooking time, you can microwave the packets for 10-12 minutes instead of baking.
  • Feel free to add other vegetables like bell peppers or zucchini to the foil packets.
  • For extra flavor, sprinkle the chicken with grated cheese during the last 5 minutes of baking.
