- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup Dijon mustard
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups baby potatoes, halved
- 1 cup carrots, sliced
- 1 tablespoon fresh parsley, chopped (for garnish)
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic, thyme, rosemary, salt, and pepper to make the honey mustard sauce.
- Lay out four large pieces of aluminum foil on a baking sheet. Place one chicken breast in the center of each foil piece.
- Season the chicken with salt and pepper, then spoon about 2 tablespoons of the honey mustard sauce over each chicken breast.
- Arrange the halved potatoes and sliced carrots around the chicken on the foil. Drizzle the remaining honey mustard sauce over the vegetables.
- Fold the sides of the foil over the chicken and vegetables to create a sealed packet.
- Bake in the preheated oven for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.
- Carefully open the foil packets, garnish with chopped parsley, and serve hot.
Notes
- For a quicker cooking time, you can microwave the packets for 10-12 minutes instead of baking.
- Feel free to add other vegetables like bell peppers or zucchini to the foil packets.
- For extra flavor, sprinkle the chicken with grated cheese during the last 5 minutes of baking.
