- 1 lb lean ground beef
- 4 cups green cabbage, thinly sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha (optional)
- 1 tablespoon olive oil
- 2 green onions, sliced (for garnish)
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add the diced onion and sauté for 2-3 minutes until softened.
- Stir in garlic and ginger, cooking for about 30 seconds until fragrant.
- Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Drain excess fat if necessary.
- Add cabbage to the skillet and cook for 4-5 minutes until it starts to soften but still has a bit of crunch.
- Stir in soy sauce, sesame oil, rice vinegar, and sriracha (if using). Mix everything well and cook for another 2 minutes.
- Season with salt and pepper to taste.
- Remove from heat and garnish with green onions before serving.

- Use ground turkey or chicken as a leaner alternative to beef.
- Add shredded carrots or bell peppers for more color and nutrition.
- Serve over cauliflower rice for a low-carb option or jasmine rice for a classic touch.
