- ¾ cup olive oil
- 2 large red peppers, grated
- 1 head garlic, thinly sliced
- 1 large bunch cilantro, finely chopped
- ½ teaspoon fine sea salt, more to taste
- ½ teaspoon red pepper flakes (optional)
- 2 pounds white fish (cod, halibut, or sole)
- Garlicky green beans, for serving (optional)
- For the Garlicky Rice (optional):
- 1–2 heads garlic, sliced
- 1 tablespoon olive oil
- 1 cup jasmine rice, rinsed
- 1.5 cups water
- Sea salt, to taste
Instructions
- Warm olive oil in a large skillet over medium-low heat.
- Add grated red peppers and sliced garlic. Cook gently for 5–7 minutes until fragrant and softened, without browning the garlic.
- Season with salt and red pepper flakes (if using).
- Add the white fish fillets to the skillet and spoon some of the garlicky pepper oil over them.
- Sprinkle chopped cilantro on top and simmer for 10–12 minutes, spooning sauce over the fish occasionally until it flakes easily.
- Taste and adjust seasoning as needed.
- For the optional garlicky rice, sauté sliced garlic in olive oil, add rinsed jasmine rice, water, and salt. Cover and cook until fluffy.
- Serve the fish warm with rice or green beans, drizzled with extra sauce.
