Description
A warm, cheesy pull-apart style loaf filled with creamy cottage cheese, garlic, herbs, mozzarella, and Parmesan, then baked until golden and irresistible.

- 1 large French bread loaf, about 16 ounces
- 1 cup cottage cheese
- 4 tablespoons unsalted butter, softened
- 1 cup mozzarella cheese, shredded, divided
- 1/4 cup Parmesan cheese, finely grated
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh chives, finely chopped
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F and line a baking sheet or small tray with foil.
- In a mixing bowl, stir together the cottage cheese, softened butter, 3/4 cup of the mozzarella, Parmesan, garlic, parsley, chives, Italian seasoning, salt, and black pepper until creamy and evenly combined.
- Place the bread loaf on the prepared baking sheet. Cut deep slices across the loaf about 1 inch apart, making sure not to cut all the way through the bottom.
- Spoon the filling into each cut, gently opening the slices as needed. Spread any remaining filling over the top and sprinkle with the remaining 1/4 cup mozzarella.
- Loosely cover the loaf with foil and bake for 15 minutes.
- Remove the foil and bake for another 10 to 12 minutes, until the cheese is melted, golden, and the bread edges are lightly crisp.
- Let the loaf rest for 5 minutes before slicing or pulling apart to serve warm.
Notes
- Drain the cottage cheese briefly if it seems very wet.
- Do not slice all the way through the bottom of the loaf.
- For extra warmth, add a pinch of red pepper flakes to the filling.
- Reheat leftovers in the oven for the best texture.
