Description

A soft and festive egg nog layer cake baked until golden and topped with fluffy whipped cream icing and colorful holiday sprinkles. This moist cake is lightly spiced with nutmeg and finished with a cloud like topping that makes every slice feel like a celebration.


Ingredients

  • 2 1/2 cups all purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 1/2 cups egg nog
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream, cold
  • 1 cup powdered sugar
  • 2 tablespoons red green and white sprinkles


Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.
  2. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in egg nog and vanilla extract until fully combined.
  5. In a separate bowl, whisk together flour, baking powder, salt, and ground nutmeg.
  6. Gradually mix dry ingredients into the wet mixture until just combined. Do not overmix.
  7. Pour batter into the prepared baking dish and smooth the top evenly.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely before frosting.
  10. In a chilled bowl, whip cold heavy whipping cream with powdered sugar until soft peaks form.
  11. Spread whipped cream icing evenly over the cooled cake and decorate with sprinkles.
