Description

A warm and comforting Easy Chicken, Potatoes and Pea Soup made with tender chunks of chicken, soft diced potatoes, sweet green peas, and carrots simmered in a light savory broth. Simple, hearty, and perfect for cozy family dinners.


Ingredients

  • 1 pound boneless skinless chicken thighs, cut into chunks
  • 3 medium potatoes, peeled and diced
  • 1 cup green peas, fresh or frozen
  • 2 medium carrots, diced
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add chopped onion and diced carrots, and sauté for about 5 minutes until softened. Stir in minced garlic and cook for 1 minute.
  2. Add chicken chunks to the pot and cook for 3 to 4 minutes until lightly opaque on the outside.
  3. Stir in diced potatoes and pour in chicken broth. Bring to a gentle simmer.
  4. Simmer for 20 to 25 minutes until potatoes are tender and chicken is fully cooked.
  5. Add green peas and cook for an additional 3 to 5 minutes.
  6. Season with salt and black pepper to taste.
  7. Sprinkle chopped fresh parsley over the soup.
  8. Ladle into bowls and serve warm.

Notes

  • Keep the simmer gentle to ensure the chicken stays tender.
  • If the soup thickens too much, add a splash of warm broth before serving.
  • Frozen peas can be added directly without thawing.
  • For deeper flavor, add a bay leaf while simmering and remove before serving.
