- 1 pound boneless skinless chicken thighs, cut into chunks
- 3 medium potatoes, peeled and diced
- 1 cup green peas, fresh or frozen
- 2 medium carrots, diced
- 1 medium yellow onion, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large soup pot over medium heat. Add chopped onion and diced carrots, and sauté for about 5 minutes until softened. Stir in minced garlic and cook for 1 minute.
- Add chicken chunks to the pot and cook for 3 to 4 minutes until lightly opaque on the outside.
- Stir in diced potatoes and pour in chicken broth. Bring to a gentle simmer.
- Simmer for 20 to 25 minutes until potatoes are tender and chicken is fully cooked.
- Add green peas and cook for an additional 3 to 5 minutes.
- Season with salt and black pepper to taste.
- Sprinkle chopped fresh parsley over the soup.
- Ladle into bowls and serve warm.
Notes
- Keep the simmer gentle to ensure the chicken stays tender.
- If the soup thickens too much, add a splash of warm broth before serving.
- Frozen peas can be added directly without thawing.
- For deeper flavor, add a bay leaf while simmering and remove before serving.
