Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.

- Sprinkle grated parmesan cheese evenly over the parchment lined baking sheet.
- Place the potatoes cut side down directly onto the parmesan layer, pressing gently so they adhere.
- Roast for 35 to 40 minutes until the potatoes are fork tender and the parmesan forms a golden crust.
- Remove from the oven and let rest for 5 minutes.
- Carefully lift each potato with a spatula, keeping the crust intact.
