Description

Golden roasted baby potatoes with a crispy parmesan crust on the bottom and a fluffy, tender center, seasoned with garlic and herbs for the ultimate savory side dish.


Ingredients

  • 1 1/2 pounds baby potatoes, halved
  • 1 cup grated parmesan cheese
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss halved baby potatoes with olive oil, minced garlic, dried oregano, salt, and black pepper until evenly coated.
  3. Sprinkle grated parmesan cheese evenly over the parchment lined baking sheet.
  4. Place the potatoes cut side down directly onto the parmesan layer, pressing gently so they adhere.
  5. Roast for 35 to 40 minutes until the potatoes are fork tender and the parmesan forms a golden crust.
  6. Remove from the oven and let rest for 5 minutes.
  7. Carefully lift each potato with a spatula, keeping the crust intact.
  8. Transfer to a serving plate and sprinkle with freshly chopped parsley before serving.
