Description

Crispy tortilla cones filled with savory seasoned beef, melted cheddar, fresh lettuce, tomatoes, and a cool dollop of sour cream. This playful dinner is crunchy, hearty, and perfect for weeknights or parties.


Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup water
  • 8 small flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups romaine lettuce, shredded
  • 2 medium Roma tomatoes, diced
  • 1/2 cup sour cream
  • 2 tablespoons fresh cilantro, chopped
  • 4 lime wedges, for serving


Instructions

  1. Preheat the oven to 400°F. Lightly grease a baking sheet and prepare 8 foil cone molds or oven-safe cone forms.
  2. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the garlic and cook for 30 seconds.
  3. Add the ground beef and cook until browned, breaking it up as it cooks. Stir in the tomato paste, chili powder, cumin, smoked paprika, oregano, salt, black pepper, and water. Simmer for 3 to 5 minutes until the mixture is thick and well coated.
  4. Warm the tortillas briefly until flexible. Wrap each tortilla around a cone mold and place seam side down on the prepared baking sheet.
  5. Bake the tortilla cones for 8 to 10 minutes until crisp and golden. Let them cool slightly.
  6. Fill each cone with the warm beef mixture and top with shredded cheddar cheese.
  7. Return the filled cones to the oven for 2 minutes, just until the cheese softens and everything is heated through.
  8. Top with shredded romaine, diced tomatoes, sour cream, and chopped cilantro. Serve immediately with lime wedges.

Notes

  • Warm the tortillas before shaping to prevent cracking.
  • Let the beef mixture thicken properly so the shells stay crisp.
  • Assemble just before serving for the best texture.
