- 1 lb potatoes, peeled and cubed
- 1 small red onion, finely chopped
- 1/2 cucumber, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white vinegar
- Salt and black pepper, to taste
- 1/4 teaspoon paprika (optional, for garnish)
Instructions
- Boil the potatoes in salted water for 10–12 minutes, or until tender. Drain and let them cool slightly.
- In a large bowl, combine the boiled potatoes, red onion, cucumber, parsley, and dill.
- In a small bowl, whisk together olive oil, lemon juice, vinegar, salt, and pepper to create the dressing.
- Pour the dressing over the potato mixture and toss gently to combine.
- Sprinkle with paprika for garnish, if desired, and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For extra flavor, add a boiled egg, chopped, to the salad.
- Try using red potatoes for a more colorful version.
- Can be made a day ahead and stored in the fridge for better flavor.
