Description

  • 2 large boneless skinless chicken breasts, about 450 grams, cooked and sliced
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1 small red onion, thinly sliced
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 3 tablespoons mayonnaise
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Preheat a skillet over medium heat and lightly oil the pan if cooking fresh chicken.
  2. Whisk together honey, Dijon mustard, mayonnaise, olive oil, salt, and black pepper in a small bowl until smooth and creamy.
  3. Cook the chicken breasts for 6 to 7 minutes per side until fully cooked and golden. Let them rest, then slice.
  4. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and sliced chicken.
  5. Allow freshly cooked chicken to cool slightly before adding to the lettuce to prevent wilting.
  6. Drizzle the honey mustard dressing over the salad and toss gently until evenly coated. Sprinkle chopped parsley on top.
  7. Serve immediately or chill for 15 to 20 minutes before serving for enhanced flavor.
