- 4 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, sliced
- 1 small red onion, thinly sliced
- 3 tablespoons honey
- 2 tablespoons Dijon mustard
- 3 tablespoons mayonnaise
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat a skillet over medium heat and lightly oil the pan if cooking fresh chicken.
- Whisk together honey, Dijon mustard, mayonnaise, olive oil, salt, and black pepper in a small bowl until smooth and creamy.
- Cook the chicken breasts for 6 to 7 minutes per side until fully cooked and golden. Let them rest, then slice.
- In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, and sliced chicken.
- Allow freshly cooked chicken to cool slightly before adding to the lettuce to prevent wilting.
- Drizzle the honey mustard dressing over the salad and toss gently until evenly coated. Sprinkle chopped parsley on top.
- Serve immediately or chill for 15 to 20 minutes before serving for enhanced flavor.
