- 3 cups cooked rotini pasta
- 1 1/2 cups corn kernels
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/4 cup finely chopped red onion
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Bring a large pot of salted water to a boil and cook pasta until tender. Drain and cool completely.
- In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper.
- In a large bowl, combine pasta, corn, cherry tomatoes, cucumber, and red onion.
- Pour dressing over the mixture and toss until evenly coated.
