Description

A fresh and creamy corn pasta salad packed with tender pasta, sweet corn, and crisp vegetables, perfect for quick meals or gatherings.


Ingredients

  • 3 cups cooked rotini pasta
  • 1 1/2 cups corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/4 cup finely chopped red onion
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until tender. Drain and cool completely.
  2. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper.
  3. In a large bowl, combine pasta, corn, cherry tomatoes, cucumber, and red onion.
  4. Pour dressing over the mixture and toss until evenly coated.
