- 3/4 cup unsweetened cocoa powder
- 1 1/2 cups granulated sugar
- 1/2 cup brown sugar
- 1 1/2 teaspoons baking powder

- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot water
- 1 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 cup heavy cream, divided
- 1 1/2 cups semi sweet chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit and grease two 9 inch round cake pans.
- In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, mix eggs, whole milk, vegetable oil, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients and mix until smooth. Slowly stir in the hot water until fully incorporated.
- Divide the batter evenly between the prepared pans and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake layers to cool completely before assembling.
- To make the filling, beat softened butter with powdered sugar and 1/2 cup heavy cream until light and fluffy.
- Spread the cream filling evenly over one cake layer and place the second layer on top.
- Heat the remaining 1/2 cup heavy cream until warm, then pour over the chocolate chips. Let sit for 1 to 2 minutes, then stir until smooth to create ganache.
- Pour and spread the ganache over the top and sides of the cake. Let it set slightly before slicing and serving.
Notes
- Make sure cake layers are completely cool before adding filling.
- Use high quality cocoa powder for deeper flavor.
- Chill the cake briefly before pouring ganache for cleaner coverage.
- Store covered at room temperature for up to 2 days or refrigerate for up to 5 days.
