Description

Chicken Taco Casserole is a hearty and flavorful dish made with layers of seasoned chicken, tortilla chips, cheese, and a creamy base. It’s an easy, comforting casserole that brings the flavors of tacos to the dinner table in a convenient and delicious form.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the shredded chicken and taco seasoning, cooking for 2–3 minutes to coat the chicken in the seasoning.
  2. Stir in the black beans, diced tomatoes with green chilies, sour cream, and salsa. Mix everything together and cook for an additional 5 minutes until heated through. Season with salt and pepper to taste.
  3. In a greased 9×13-inch baking dish, layer half of the crushed tortilla chips. Spread the chicken mixture evenly over the chips, then top with 1 cup of shredded cheddar cheese.
  4. Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
  5. Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  6. Let the casserole cool for a few minutes before serving. Optionally, garnish with fresh cilantro or green onions for added flavor.

Notes

  • Feel free to add any other taco toppings, such as avocado, sour cream, or jalapeños, to make the dish more customizable.
  • This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
  • If you prefer a spicier casserole, use hot salsa or add sliced jalapeños to the chicken mixture.
