- 2 cups cooked chicken, shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1/2 cup sour cream
- 1/2 cup salsa
- 2 cups shredded cheddar cheese
- 2 cups crushed tortilla chips
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). In a large skillet, heat olive oil over medium heat. Add the shredded chicken and taco seasoning, cooking for 2–3 minutes to coat the chicken in the seasoning.
- Stir in the black beans, diced tomatoes with green chilies, sour cream, and salsa. Mix everything together and cook for an additional 5 minutes until heated through. Season with salt and pepper to taste.
- In a greased 9×13-inch baking dish, layer half of the crushed tortilla chips. Spread the chicken mixture evenly over the chips, then top with 1 cup of shredded cheddar cheese.
- Repeat the layers with the remaining tortilla chips, chicken mixture, and cheese.
- Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
- Let the casserole cool for a few minutes before serving. Optionally, garnish with fresh cilantro or green onions for added flavor.
Notes
- Feel free to add any other taco toppings, such as avocado, sour cream, or jalapeños, to make the dish more customizable.
- This casserole can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
- If you prefer a spicier casserole, use hot salsa or add sliced jalapeños to the chicken mixture.
