- 12 ounces fettuccine or penne
- 1 pound chicken breast, cut into bite-sized pieces
- 8 ounces cremini mushrooms, sliced
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 3/4 cup Parmesan cheese, finely grated
- 1 teaspoon Italian seasoning
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper, or to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil over high heat. Set a large skillet over medium heat.
- Season the chicken with salt, black pepper, and Italian seasoning. Slice the mushrooms, mince the garlic, grate the Parmesan, and chop the parsley.
- Add the olive oil and 1 tablespoon butter to the skillet. Cook the chicken for 5 to 6 minutes, stirring occasionally, until lightly golden and cooked through. Transfer to a plate.
- Add the remaining 1 tablespoon butter and the mushrooms to the skillet. Cook for 6 to 7 minutes until the mushrooms release their moisture and turn golden. Stir in the garlic and cook for 30 seconds.
- Cook the pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
- Pour the chicken broth and heavy cream into the skillet with the mushrooms. Stir well and simmer gently for 2 to 3 minutes. Add the Parmesan and stir until smooth.
- Return the chicken to the skillet and add the drained pasta. Toss everything together until the sauce coats the pasta evenly. Add a splash of reserved pasta water if needed.
- Cook for 1 to 2 minutes more, then taste and adjust with extra salt and pepper if needed. Sprinkle with parsley and serve warm with extra Parmesan if desired.
Notes
- Brown the mushrooms well for deeper flavor.
- Reserve pasta water to loosen the sauce if it thickens too much.
- Use freshly grated Parmesan for the smoothest sauce.
