Description

A golden, savory quick bread packed with melted cheddar and mozzarella, fragrant herbs, and warm garlic flavor. This no yeast loaf bakes up fluffy inside with a lightly crisp crust, perfect as a side or satisfying snack.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon dried Italian herbs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 ¼ cups milk
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. Preheat the oven to 180 degrees Celsius and grease or line a 9 by 5 inch loaf pan.
  2. In a large bowl, whisk together all-purpose flour, baking powder, salt, garlic powder, and dried Italian herbs.
  3. Stir in shredded cheddar and shredded mozzarella until evenly coated with the flour mixture.
  4. In a separate bowl, whisk together milk, eggs, and melted butter until smooth.
  5. Pour the wet mixture into the dry ingredients and gently stir until just combined. Fold in chopped fresh parsley.
  6. Transfer the batter into the prepared loaf pan and smooth the top evenly.
  7. Bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm.
