- 2 cups all purpose flour
- ½ cup unsalted butter, cold and cubed
- 4 to 5 tablespoons cold water
- 2 cups cheddar cheese, grated
- 2 large onions, finely sliced
- 1 cup whole milk
- 2 large eggs
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a mixing bowl, combine flour and cold cubed butter. Rub together until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a dough forms.
- Roll out the dough on a lightly floured surface and line a 9 inch pie dish. Chill for 15 minutes if possible.
- In a skillet over medium heat, cook sliced onions until soft and lightly golden. Allow to cool slightly.
- In a bowl, whisk together eggs, whole milk, salt, and black pepper.
- Stir grated cheddar cheese and cooked onions into the egg mixture.
- Pour the filling into the prepared crust.
- Bake for 35 to 40 minutes, until the filling is set and the top is golden brown.
- Allow the pie to cool slightly before slicing and serving.
Notes
- Cook the onions slowly to bring out their natural sweetness.
- Let the pie rest before slicing to help the filling firm up.
- Store leftovers in the refrigerator for up to 3 days.
