Description

A comforting Cheese and Onion Pie with a flaky buttery crust and a creamy filling made from sharp cheddar, sweet softened onions, eggs, and milk, baked until golden and set.


Ingredients

  • 2 cups all purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 4 to 5 tablespoons cold water
  • 2 cups cheddar cheese, grated
  • 2 large onions, finely sliced
  • 1 cup whole milk
  • 2 large eggs
  • ½ teaspoon salt
  • ½ teaspoon black pepper


Instructions

  1. Preheat oven to 375°F.
  2. In a mixing bowl, combine flour and cold cubed butter. Rub together until the mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until a dough forms.
  4. Roll out the dough on a lightly floured surface and line a 9 inch pie dish. Chill for 15 minutes if possible.
  5. In a skillet over medium heat, cook sliced onions until soft and lightly golden. Allow to cool slightly.
  6. In a bowl, whisk together eggs, whole milk, salt, and black pepper.
  7. Stir grated cheddar cheese and cooked onions into the egg mixture.
  8. Pour the filling into the prepared crust.
  9. Bake for 35 to 40 minutes, until the filling is set and the top is golden brown.
  10. Allow the pie to cool slightly before slicing and serving.

Notes

  • Cook the onions slowly to bring out their natural sweetness.
  • Let the pie rest before slicing to help the filling firm up.
  • Store leftovers in the refrigerator for up to 3 days.
