Description

Hearty and comforting Cattle Drive Casserole layered with seasoned ground beef, sweet corn, creamy corn filling, melted cheddar, and a golden biscuit style topping baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 cup canned corn, drained
  • 1 cup cream style corn
  • 1 cup all purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt, divided
  • 1 tablespoon granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Preheat oven to 375 degrees Fahrenheit and lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook ground beef until browned. Stir in garlic powder, 1/2 teaspoon salt, and black pepper. Drain excess grease.
  3. Spread the cooked beef evenly in the prepared baking dish.
  4. Top the beef layer with canned corn and cream style corn, spreading evenly.
  5. Sprinkle shredded cheddar cheese over the corn layer.
  6. In a mixing bowl, whisk together flour, baking powder, remaining 1/2 teaspoon salt, and granulated sugar.
  7. Stir in milk, eggs, and melted butter until smooth to form the topping batter.
  8. Pour the topping mixture evenly over the layered filling.
  9. Bake for 30 to 35 minutes, or until the top is golden and set in the center.
  10. Allow the casserole to rest for 5 to 10 minutes before serving.
