- 1 1/2 cups warm water
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1/4 cup baking soda
- 4 tablespoons unsalted butter, melted
- 1 large egg, beaten
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- In a large bowl, combine warm water, active dry yeast, and granulated sugar. Let sit for 5 minutes until foamy.
- Add all purpose flour and salt, then mix until a dough forms. Knead for 5 to 7 minutes until smooth and elastic.
- Place dough in a lightly greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Bring a large pot of water to a boil and carefully add baking soda.
- Divide dough into ropes and cut into bite sized pieces.
- Boil dough pieces in the baking soda water for 20 to 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
- Brush each bite with beaten egg.
- Bake for 12 to 15 minutes until golden brown.
- Immediately brush with melted butter and sprinkle with coarse salt before serving.
Notes
- Make sure water is warm, not hot, to properly activate the yeast.
- Do not skip the baking soda bath for authentic pretzel texture.
- Brush with butter while still warm for best flavor.
- Store in an airtight container and reheat in the oven to restore softness.
