Description

These Brown Sugar Pop Tart Bars are soft, buttery, and layered with a rich cinnamon brown sugar filling, finished with a light sweet glaze. A nostalgic homemade treat perfect for breakfast, dessert, or snacking.


Ingredients

  • 2 cups all purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons milk
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F and line an 8 by 8 inch baking dish with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add eggs and vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  4. Press half of the dough evenly into the bottom of the prepared pan.
  5. In a small bowl, combine additional brown sugar and cinnamon for the filling, then sprinkle evenly over the base layer.
  6. Gently press the remaining dough over the filling to form the top layer.
  7. Bake for 25 to 30 minutes until lightly golden and set in the center.
  8. Allow the bars to cool completely. Whisk powdered sugar with milk until smooth and drizzle over the top. Let the glaze set before slicing and serving.

Notes

  • Do not overbake to keep the bars soft and tender.
  • Allow the bars to cool fully before glazing for clean slices.
  • Store in an airtight container at room temperature for up to 3 days.
  • For freezing, freeze without glaze and add fresh glaze after thawing.
