Description

A moist and tender banana cake layered with creamy, tangy frosting and crunchy walnuts. This comforting dessert blends ripe bananas, buttery cake crumb, and smooth cream cheese frosting into a celebration worthy treat.


Ingredients

  • 3 medium ripe bananas, mashed
  • 1 cup chopped walnuts
  • 2 cups all purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat oven to 180 degrees Celsius and grease two 9 inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition.
  4. Stir in mashed bananas and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture and mix just until incorporated. Fold in chopped walnuts gently.
  6. Divide batter evenly between prepared pans and smooth the tops.
  7. Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean. Let cakes cool completely.
  8. For the frosting, beat cream cheese and heavy cream together until smooth and fluffy.
  9. Spread frosting between the cooled cake layers and over the top and sides.
  10. Garnish with banana slices and additional chopped walnuts if desired, then slice and serve.

Notes

  • Use very ripe bananas with brown spots for the best flavor.
  • Do not overmix the batter to keep the cake tender.
  • Allow the cake to cool completely before frosting.
