Description

Individual mini skillet baked ziti layered with tender pasta, rich tomato sauce, creamy ricotta, and melted mozzarella. A cozy, perfectly portioned comfort meal made just for two.


Ingredients

  • 6 ounces ziti pasta
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 1/2 cups crushed tomatoes
  • 3/4 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 to 6 fresh basil leaves


Instructions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Bring a medium saucepan of salted water to a boil and cook ziti until al dente, about 8 minutes. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant.
  4. Stir in crushed tomatoes, dried oregano, salt, and black pepper. Simmer for 5 minutes.
  5. Combine cooked ziti with the tomato sauce and half of the mozzarella cheese.
  6. Divide half of the pasta mixture evenly between two mini skillets.
  7. Add dollops of ricotta cheese throughout each skillet.
  8. Top with remaining pasta mixture, then sprinkle evenly with remaining mozzarella and grated parmesan.
  9. Bake for 18 to 22 minutes until cheese is melted, bubbly, and lightly golden at the edges.
  10. Remove from oven and let rest for 5 minutes.
  11. Garnish with fresh basil leaves before serving.

Notes

  • Cook pasta just until al dente to prevent overcooking during baking.
  • Allow the skillets to rest before serving so the layers can set properly.
  • Use freshly grated parmesan for best flavor.
  • If assembling ahead, refrigerate and add 5 extra minutes to baking time.
