These Apple Butter Thumbprint Cookies are soft, buttery, and filled with warm spiced apple butter for the ultimate cozy treat. Perfect for fall baking, holiday trays, or just a sweet snack with a cup of tea.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup apple butter
  • 2 tablespoons granulated sugar (optional for rolling)
  • 1 tablespoon cornstarch


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and brown sugar until light and fluffy.
  3. Add egg yolk and vanilla, mixing until combined.
  4. Stir in flour, cornstarch, cinnamon, and salt until a soft dough forms.
  5. Roll 1-inch balls of dough and coat in granulated sugar if desired.
  6. Place on baking sheet 2 inches apart and press a thumbprint or back of a spoon into each.
  7. Fill each indentation with 1/2 teaspoon apple butter.
  8. Bake 12–14 minutes or until edges are just golden.
  9. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Chill dough for 30 minutes for easier shaping and better texture.
  • Do not overfill with apple butter to prevent spillover.
  • Store in airtight container for up to 5 days or freeze for longer storage.
