- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup apple butter
- 2 tablespoons granulated sugar (optional for rolling)
- 1 tablespoon cornstarch
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream butter and brown sugar until light and fluffy.
- Add egg yolk and vanilla, mixing until combined.
- Stir in flour, cornstarch, cinnamon, and salt until a soft dough forms.
- Roll 1-inch balls of dough and coat in granulated sugar if desired.
- Place on baking sheet 2 inches apart and press a thumbprint or back of a spoon into each.
- Fill each indentation with 1/2 teaspoon apple butter.
- Bake 12–14 minutes or until edges are just golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Chill dough for 30 minutes for easier shaping and better texture.
- Do not overfill with apple butter to prevent spillover.
- Store in airtight container for up to 5 days or freeze for longer storage.
