Instructions
- Preheat the air fryer to 400 degrees Fahrenheit for 3 to 5 minutes.
- In a large bowl, toss sweet potato cubes with olive oil, salt, and black pepper until evenly coated.
- Arrange the sweet potatoes in a single layer in the air fryer basket without overcrowding.
- Air fry for 15 to 18 minutes, shaking the basket halfway through, until golden brown and tender.
- While the sweet potatoes cook, melt butter gently in a small saucepan over low heat. Add minced garlic and cook for 1 minute until fragrant but not browned.
- Remove sweet potatoes from the air fryer and immediately toss with the warm garlic butter and chopped parsley.
- Serve hot while crisp on the outside and tender inside.
