Description

  • 2 large sweet potatoes, about 2 pounds total, peeled and cut into 1 inch cubes
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Preheat the air fryer to 400 degrees Fahrenheit for 3 to 5 minutes.
  2. In a large bowl, toss sweet potato cubes with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the sweet potatoes in a single layer in the air fryer basket without overcrowding.
  4. Air fry for 15 to 18 minutes, shaking the basket halfway through, until golden brown and tender.
  5. While the sweet potatoes cook, melt butter gently in a small saucepan over low heat. Add minced garlic and cook for 1 minute until fragrant but not browned.
  6. Remove sweet potatoes from the air fryer and immediately toss with the warm garlic butter and chopped parsley.

  • Cut the sweet potatoes evenly so they cook at the same rate.
