- 2 cups shredded zucchini (well-drained)
- 2 large eggs
- 1 cup shredded mozzarella cheese (divided)
- 1/4 cup grated parmesan cheese
- 1/4 cup all-purpose flour
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 cup pepperoni slices
- 1/2 cup bell pepper strips
Instructions
- Preheat oven to 450°F. Line a pizza pan with parchment paper.
- In a large bowl, mix zucchini, eggs, 1/2 cup mozzarella, parmesan, flour, Italian seasoning, and salt until combined.
- Spread the mixture into a 10–12 inch circle on the lined pan.
- Bake for 15–20 minutes until golden and firm.
- Remove, sprinkle with remaining mozzarella, pepperoni, and bell peppers.
- Return to oven and bake 8–10 minutes more until bubbly and browned.
- Cool for 5 minutes, slice, and serve warm.
Notes
- Squeeze out as much moisture as possible from zucchini for a crisp crust.
- Use parchment to avoid sticking and promote browning.
- Don’t overload with toppings to maintain structure.
- Broil at the end for a golden cheesy top.
