Description
Yogurt Pasta is a creamy, tangy Mediterranean-inspired dish made with plain yogurt, garlic, and pasta, offering a quick and comforting meal with minimal ingredients.
Ingredients
Scale
- 8 oz (225g) spaghetti or pasta of choice
- 1 1/2 cups plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley or mint, chopped (for garnish)
- 1 tablespoon butter (optional, for added richness)
Instructions
- Cook the pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
- In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
- Lower the heat and add the yogurt, stirring constantly to avoid curdling. Add a splash of pasta water to loosen if needed.
- Season with salt and pepper. Stir in butter and Parmesan if using.
- Add the drained pasta to the sauce and toss until evenly coated.
- Serve warm, garnished with fresh parsley or mint.
Notes
- Use full-fat yogurt for a creamier texture and to prevent curdling.
- Stir constantly and avoid high heat when adding yogurt to prevent separation.
- For extra flavor, add red pepper flakes or a squeeze of lemon juice.
