Description

Yogurt Pasta is a creamy, tangy Mediterranean-inspired dish made with plain yogurt, garlic, and pasta, offering a quick and comforting meal with minimal ingredients.


Ingredients

  • 8 oz (225g) spaghetti or pasta of choice
  • 1 1/2 cups plain Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley or mint, chopped (for garnish)
  • 1 tablespoon butter (optional, for added richness)

Instructions

  1. Cook the pasta in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
  2. In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. Lower the heat and add the yogurt, stirring constantly to avoid curdling. Add a splash of pasta water to loosen if needed.
  4. Season with salt and pepper. Stir in butter and Parmesan if using.
  5. Add the drained pasta to the sauce and toss until evenly coated.
  6. Serve warm, garnished with fresh parsley or mint.

  • Use full-fat yogurt for a creamier texture and to prevent curdling.
