Description

Soft and chewy white chocolate cookies topped with a silky blue spirulina buttercream frosting. Creamy, vibrant, and visually stunning, these cookies are perfect for celebrations or whenever you want a naturally colorful treat.

Ingredients

Scale
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups white chocolate chips
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1 teaspoon blue spirulina powder

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream 1 cup softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined.
  6. Fold in white chocolate chips evenly throughout the dough.
  7. Scoop dough onto prepared baking sheets, spacing evenly.
  8. Bake for 10 to 12 minutes until edges are lightly golden and centers remain soft.
  9. Allow cookies to cool completely on a wire rack.
  10. In a clean bowl, beat 1/2 cup softened butter for frosting until creamy. Gradually add powdered sugar and mix until smooth.
  11. Add blue spirulina powder and blend until evenly colored and silky.
  12. Pipe generous swirls of frosting onto cooled cookies before serving.

Notes

  • Cool cookies fully before frosting to prevent melting.
  • Add spirulina gradually to control color intensity.
  • Sift powdered sugar for ultra smooth buttercream.
