Instructions
- Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream 1 cup softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then mix in vanilla extract.
- Gradually add dry ingredients to the wet mixture and mix until just combined.
- Fold in white chocolate chips evenly throughout the dough.
- Scoop dough onto prepared baking sheets, spacing evenly.
- Bake for 10 to 12 minutes until edges are lightly golden and centers remain soft.
- Allow cookies to cool completely on a wire rack.
- In a clean bowl, beat 1/2 cup softened butter for frosting until creamy. Gradually add powdered sugar and mix until smooth.
- Add blue spirulina powder and blend until evenly colored and silky.
- Pipe generous swirls of frosting onto cooled cookies before serving.
