Description

Frozen watermelon is shaved into a fluffy, icy dessert and finished with lime and optional mint for a bright, refreshing treat that is perfect for warm days.


Ingredients

  • 6 cups seedless watermelon, cubed
  • 1 tablespoon fresh lime juice
  • 1 to 2 tablespoons maple syrup, optional
  • 1 tablespoon fresh mint leaves, thinly sliced, optional for garnish
  • 1 tiny pinch fine sea salt, optional


Instructions

  1. Place serving bowls in the freezer for 10 minutes, if desired.
  2. In a large bowl, toss the cubed watermelon with the lime juice, optional maple syrup, and optional pinch of sea salt until evenly coated.
  3. Spread the watermelon cubes in a single layer on a parchment-lined tray or baking sheet.
  4. Freeze for 4 hours, or until completely solid.
  5. Grate the frozen watermelon on the large holes of a box grater, or pulse it briefly in a food processor until it forms fluffy shaved ice.
  6. Spoon the shaved watermelon into chilled serving bowls.
  7. Let it rest for 1 to 2 minutes so the texture softens slightly.
  8. Top with thinly sliced mint, if using, and serve immediately.

  • Use ripe watermelon for the best natural sweetness.
  • Do not over-process the frozen fruit or it may turn slushy.
  • Serve immediately for the fluffiest texture.
  • Freeze the watermelon in a single layer before storing for easier shaving later.
