Description
Frozen watermelon is shaved into a fluffy, icy dessert and finished with lime and optional mint for a bright, refreshing treat that is perfect for warm days.

- 6 cups seedless watermelon, cubed
- 1 tablespoon fresh lime juice
- 1 to 2 tablespoons maple syrup, optional
- 1 tablespoon fresh mint leaves, thinly sliced, optional for garnish
- 1 tiny pinch fine sea salt, optional
Instructions
- Place serving bowls in the freezer for 10 minutes, if desired.
- In a large bowl, toss the cubed watermelon with the lime juice, optional maple syrup, and optional pinch of sea salt until evenly coated.
- Spread the watermelon cubes in a single layer on a parchment-lined tray or baking sheet.
- Freeze for 4 hours, or until completely solid.
- Grate the frozen watermelon on the large holes of a box grater, or pulse it briefly in a food processor until it forms fluffy shaved ice.
- Spoon the shaved watermelon into chilled serving bowls.
- Let it rest for 1 to 2 minutes so the texture softens slightly.
- Top with thinly sliced mint, if using, and serve immediately.

- Do not over-process the frozen fruit or it may turn slushy.
