Instructions
- Preheat the oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper or lightly grease it with coconut oil.
- In a large mixing bowl, combine the almond butter, maple syrup, and melted coconut oil. Stir until smooth and well combined.
- Add the almond flour, shredded coconut, baking soda, salt, and vanilla extract. Stir until a thick batter forms. If desired, fold in chopped almonds and chocolate chips.
- Spread the batter evenly in the prepared baking pan, pressing it down with a spatula.
- Bake for 18-20 minutes, or until the blondies are golden and a toothpick inserted into the center comes out clean.
- Allow the blondies to cool completely in the pan before slicing into squares. Serve and enjoy!
