- 12 ounces sausage, sliced
- 2 cans white beans, drained and rinsed
- 2 medium carrots, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups leafy greens
- 4 cups broth
- 1/2 cup cream
- 1 tablespoon olive oil
- 1 teaspoon dried herbs
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the sliced sausage and cook until browned on all sides.
- Add the onion and carrots and cook for about 5 minutes until softened.
- Stir in the garlic and herbs and cook for 1 minute until fragrant.
- Add the white beans and broth, stirring to combine.
- Bring to a gentle simmer and cook for 15 to 20 minutes.
- Stir in the cream and leafy greens and cook for another 3 to 5 minutes until the greens are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
Notes
- Mash some of the beans in the pot for a thicker soup.
- Add the greens at the end to keep them fresh and vibrant.
