Description

A cozy one-pot Tuscan White Bean Sausage Soup made with creamy white beans, savory sausage, tender vegetables, and leafy greens in a rich, comforting broth. Perfect for an easy weeknight dinner or make-ahead meal.


Ingredients

  • 12 ounces sausage, sliced
  • 2 cans white beans, drained and rinsed
  • 2 medium carrots, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups leafy greens
  • 4 cups broth
  • 1/2 cup cream
  • 1 tablespoon olive oil
  • 1 teaspoon dried herbs
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the sliced sausage and cook until browned on all sides.
  3. Add the onion and carrots and cook for about 5 minutes until softened.
  4. Stir in the garlic and herbs and cook for 1 minute until fragrant.
  5. Add the white beans and broth, stirring to combine.
  6. Bring to a gentle simmer and cook for 15 to 20 minutes.
  7. Stir in the cream and leafy greens and cook for another 3 to 5 minutes until the greens are tender.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy.

Notes

  • Mash some of the beans in the pot for a thicker soup.
  • Add the greens at the end to keep them fresh and vibrant.
  • This soup tastes even better the next day.
