This Turkey Meatloaf with a Chipotle Glaze is a modern twist on classic comfort food. Lean ground turkey and sausage are packed with veggies, then topped with a smoky-sweet glaze for the perfect balance of flavor and tenderness.

- 1 zucchini, diced
- 1/2 red bell pepper, diced
- 1 carrot, diced
- 1/2 red onion, diced
- 2 garlic cloves, diced
- 2 tablespoons extra-virgin olive oil
- 3/4 cup ketchup
- 3 tablespoons adobo sauce (from chipotle peppers)
- 1 pound ground turkey
- 1 pound turkey Italian sausage (casings removed)
- 2 eggs
- 1/2 cup panko breadcrumbs
- 1/2 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375°F and line a baking sheet or loaf pan with parchment paper.
- Heat olive oil in a skillet over medium heat. Add diced zucchini, bell pepper, carrot, onion, and garlic. Sauté 4–5 minutes until softened, then set aside to cool.
- In a large bowl, combine ground turkey, turkey sausage, eggs, panko breadcrumbs, cumin, salt, pepper, and the sautéed vegetables. Mix gently until combined.
- Shape the mixture into a loaf and place it on the prepared baking sheet.
- In a small bowl, whisk together ketchup and adobo sauce to create the glaze. Spread half the glaze on top of the loaf.
- Bake for 45 minutes, then brush with remaining glaze and bake an additional 10–15 minutes, or until internal temperature reaches 165°F.
- Remove from oven and let rest 10 minutes before slicing. Serve warm with your favorite sides.
Notes
- Do not overmix the meat to keep it tender.
- Double the glaze if you love extra sauce.
