Description

This Turkey Meatloaf with a Chipotle Glaze is a modern twist on classic comfort food. Lean ground turkey and sausage are packed with veggies, then topped with a smoky-sweet glaze for the perfect balance of flavor and tenderness.


Ingredients

  • 1 zucchini, diced
  • 1/2 red bell pepper, diced
  • 1 carrot, diced
  • 1/2 red onion, diced
  • 2 garlic cloves, diced
  • 2 tablespoons extra-virgin olive oil
  • 3/4 cup ketchup
  • 3 tablespoons adobo sauce (from chipotle peppers)
  • 1 pound ground turkey
  • 1 pound turkey Italian sausage (casings removed)
  • 2 eggs
  • 1/2 cup panko breadcrumbs
  • 1/2 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper


Instructions

  1. Preheat oven to 375°F and line a baking sheet or loaf pan with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add diced zucchini, bell pepper, carrot, onion, and garlic. Sauté 4–5 minutes until softened, then set aside to cool.
  3. In a large bowl, combine ground turkey, turkey sausage, eggs, panko breadcrumbs, cumin, salt, pepper, and the sautéed vegetables. Mix gently until combined.
  4. Shape the mixture into a loaf and place it on the prepared baking sheet.
  5. In a small bowl, whisk together ketchup and adobo sauce to create the glaze. Spread half the glaze on top of the loaf.
  6. Bake for 45 minutes, then brush with remaining glaze and bake an additional 10–15 minutes, or until internal temperature reaches 165°F.
  7. Remove from oven and let rest 10 minutes before slicing. Serve warm with your favorite sides.

Notes

  • Do not overmix the meat to keep it tender.
  • Double the glaze if you love extra sauce.
  • Let the meatloaf rest before slicing for clean cuts and juicy texture.
