- 4 cups fresh blackberries (or frozen, thawed)
- 1 cup granulated sugar, divided
- 1/4 cup cornstarch
- 1/2 tsp lemon zest
- 1 tbsp lemon juice
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon (optional)
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish with butter or cooking spray.
- In a large bowl, combine the blackberries, 3/4 cup of sugar, cornstarch, lemon zest, and lemon juice. Toss to coat the berries evenly, then transfer the mixture to the prepared baking dish.
- In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using). Add the butter, milk, vanilla extract, and the remaining 1/4 cup of sugar. Stir until a thick batter forms.
- Drop spoonfuls of the batter over the blackberry mixture, covering the berries as much as possible.
- Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
- Let the cobbler cool for a few minutes before serving. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
Notes
- If using frozen blackberries, make sure to thaw and drain them to avoid excess liquid in the cobbler.
- You can add a sprinkle of cinnamon sugar on top of the batter before baking for extra sweetness and flavor.
- Store leftovers in the refrigerator for up to 3 days.
