Ingredients

  • 4 cups fresh blackberries (or frozen, thawed)
  • 1 cup granulated sugar, divided
  • 1/4 cup cornstarch
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a 9×9-inch baking dish with butter or cooking spray.
  2. In a large bowl, combine the blackberries, 3/4 cup of sugar, cornstarch, lemon zest, and lemon juice. Toss to coat the berries evenly, then transfer the mixture to the prepared baking dish.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon (if using). Add the butter, milk, vanilla extract, and the remaining 1/4 cup of sugar. Stir until a thick batter forms.
  4. Drop spoonfuls of the batter over the blackberry mixture, covering the berries as much as possible.
  5. Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
  6. Let the cobbler cool for a few minutes before serving. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

  • If using frozen blackberries, make sure to thaw and drain them to avoid excess liquid in the cobbler.
